Do I need a single tank adaptor to use this with a single AL80 or steel 100cuft tank? If so, why?

It all depends on the wing you are using. If the wing you are using has a built-in sta, then you do not need one. If you do not have a wing with a built-in sta, then you will need one to hold the tank in place. The plate will work with and without a sta.
