I planning the move from a traditional jacket BC to a BP/W system. What size backplate should be ordered for someone 5'10"". Also will a 30# wing worker I primarily dive cold fresh water with a steel HP100 & HP120?

A standard size backplate should work fine. The wing lift will depend on the amount of equipment you are diving with, also if you are diving in a wetsuit or drysuit. With the use of a HP120 tank, you would more likely need at least a 38-40# wing.
