Does this ship with burst disk/plugs to use independently for example sidemount? If not which plug/disc would it require?

Hi Will, the plugs for these valves are sold separately. They are $12.75 each, and they are specific to Right and Left hand orientation. They use the Dive Rite modular valve plugs. If you would like to discuss the manifold, please feel free to contact me direct at augiej@diverightinscuba.com.
